			<content:encoded><![CDATA[<p>There are many versions to this candy recipe, but I&#8217;m going to share my twist on it!</p>
<p><span style="font-size: x-small; color: #847840; font-family: Arial;">INGREDIENTS:</span></p>
<ul>
<li>1/2 cup butter, melted</li>
<li>1 pound confectioners&#8217; sugar</li>
<li>1 1/2 cups peanut butter</li>
<li>1 teaspoon vanilla extract</li>
<li>1# Coating Chocolate</li>
</ul>
<p>*Melt chocolate over double broiler. While that is melting you&#8217;ll want to cover your work area with waxed paper.</p>
<p>*In a large bowl, combine (your kiddos can do this step, if you over watch them) all of the above ingredients.</p>
<p>*Roll dough into quarter-sized balls, then roll each Buckeye into the chocolate, only covering 3/4th of the way so the peanut butter shows at the top.  I use a tooth pick to hold the Buckeye while rolling in chocolate.</p>
<p>*Once the Buckeye is covered with chocolate you&#8217;ll want to place it on the waxed paper for several hours, until the chocolate is firm.</p>
